Match fan speed to what is cooking

Turn the vent fan on before you start cooking something that produces significant steam, smoke, or odor, rather than after the fact, since it is far easier to prevent buildup than to clear it once it has spread through the kitchen. Use a higher speed for searing, frying, or anything producing visible smoke, and a lower, steady speed for simmering or baking where light steam is the main concern.

Keep the grease filter clean

The metal grease filter, usually a removable panel on the underside of the unit, catches airborne grease before it reaches the fan and duct. A clogged filter is the single biggest, most avoidable drag on venting performance, restricting airflow even when the fan is running at full speed. Clean it every one to three months depending on cooking frequency, either by hand or in the dishwasher if the manufacturer instructions allow it.

Ducted vs recirculating installations

  • Ducted installations vent air, smoke, and moisture directly outside through ductwork, which is the more effective option for genuinely clearing cooking byproducts from the kitchen.
  • Recirculating installations filter air through a charcoal or carbon filter and return it to the kitchen rather than venting outside, which is less effective at clearing heat and moisture but does not require exterior ductwork.

If your unit is recirculating and venting performance feels weak even with a clean grease filter, the charcoal filter, a separate component from the grease filter, may need replacing on its own schedule.
